Sushi originated in Southeast Asia with “narezushi”, a method of preserving fish in fermented rice. By the 8th century, this technique made its way to Japan, evolving into something more delicious as the Japanese began to enjoy the rice along with the fish.
In the early 17th century, chef Matsumoto Yoshiichi introduced rice vinegar, speeding up fermentation. But it was in the 19th century that sushi truly soared in popularity, thanks to Hanaya Yohei, who created nigiri—fresh fish topped with seasoned, vinegared rice. This quick and tasty dish became the fast food of its time!
Sushi eventually made its way to the West, where chefs adapted it to local tastes, giving rise to creations like the California roll. Today, sushi is a global sensation, enjoyed by millions including the gorgeous county of Norfolk.
